Our authentic Honey Shine is a smooth spirit made entirely from Annapolis Valley honey. The honey is slowly fermented and then pot distilled through Kirby, the first “legal” still to be built in Nova Scotia. This delicious spirit is then rested in an oak barrel for a year and allowed to mellow at 40%. The subtle hints of honey in the background of this “whisky-like” product, give it a unique characteristic that will be best enjoyed straight up, or on the rocks.
